Hobo Dinner

This was a standard dinner for those evenings spent on our boat growing up. By the time our parents were able to drag my little sister and I out of the river we usually had a plate full of Hobo Dinner ready and waiting for us. To this day whenever we make this meal memories of those summer nights come flooding back to me.


  • 1 Pork Kielbasa
  • 8 Red Potatoes
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper
  • 1/2 Yellow Bell Pepper
  • 1/3 C. Chopped Red Onion
  • 4 Cloves crushed Garlic
  • 1/2 Stick Butter
  • 3 T. Olive Oil
  • Cooking Spray


  1. Spray foil with cooking spray
  2. Cut up kielbasa, peppers, potatoes, onion and garlic.
  3. Toss in olive oil.
  4. wrap in foil with sliced butter and grill over medium heat for about 45-50 min.
