This Tomato Vinaigrette is great on salads and even better as a dipping sauce for breads. I also like to serve with a meat, cheese and cracker tray to sauce things up! I try to keep a jar or two in the fridge to save time when preping a meal.
- 2 Roma Tomatoes
- 1 Clove Garlic (minced)
- 1/4 C. Red Wine Vinegar
- 1 C. Olive Oil
- 1/2 Jar Sun Dried Tomatoes With Oil
- 1 T. Dijon Mustard
- 5 T. Lemon Juice
- 1 T. Italian Seasoning
- 1/2 Small Yellow Onion (diced)
- Salt and Pepper to taste.
- Combine all ingredients in a food processor and pulse until almost smooth.
