Herb Crusted Prime Rib

For Christmas each year Pap makes his tried and true Prime Rib recipe but this year he has discovered the Tasty section by Buzzfeed. He is constantly tagging me on Facebook in countless mouthwatering Tasty recipes. We have yet to be disappointed by a single recipe we have tried, and their “Prime Rib with Garlic Butter” Recipe is no exception. We gave the new recipe a try last year and I think it’s safe to say that there is no going back. This recipe is so simple and packed with subtle but rich flavors that makes it impossible to leave a single bite left on your plate.

When I began planning this year’s #HunkiedorieHarvestParty I knew I wanted to step up my game and change the menu as much as I could from the previous year. I usually try to have the following in my menu:

Appetizers
Soup
Salad
Chicken/Poultry
Beef
Vegetarian/Pasta
1-2 Sides
Dessert

When it came to the beef option I knew right away what I wanted. This Crusted Prime Rib recipe is crazy easy (but a little expensive). It was definitely the crowd favorite. When we brought the platter down and announced there was a prime rib option all the guys in our group had a momentary deer in the headlights look before tripping over themselves to form a line. I was a little bummed that by the time I made it to the front of the line there was nothing left, but then I was also pleased that it was such a success. When asking my friends what was their favorite menu item at the end of the evening, the prime rib was the most common answer.

Herb Crusted Prime Rib

Ingredients:

  • 1 C. butter-softened
  • 7 Cloves Garlic-minced
  • 2 T. Fresh Rosemary-finely chopped
  • 2 T Fesh Thyme-finely chopped
  • 2 T Kosher Salt
  • 1 T. Fresh Cracked Black Pepper
  • 10-12 lbs. Boneless Ribeye Roast (this feeds about 1 person/lb)
  • 1 T. Minced Onions

 

Directions:

  1. Preheat oven to 500°F
  2. Mix together the butter, garlic, herbs, onion, salt, and pepper in a bowl.

  3. Layout your rib roast on wax paper and pat dry.

  4. Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.

  5. Bake for 5 minutes per pound of meat.
  6. Turn off the heat and let the rib roast sit in the oven for 2 hours, making sure you do not open the oven door or else the residual heat will escape.

  7. Once the 2 hours are up, remove the roast from the pan and tent with tin foil.
  8. Serve with gravy or au jus.
  9. Enjoy!
